Numerous programmes have been produced as a tribute to famous restaurant, hotel chefs but far less on the precious staff, the assistants they work with. A waiter, a commis chef, a cheesemonger, a couple of hotel owners, they all share their knowledge and experience of the trade. The documentary gives a no waffle view of the trade and opens up new perceptions.
